Besan Ladoo reminds me of my childhood days and how we used to enjoy such sweets as kids. Diwali is just round the corner and the countdown has begun. As we all know its the time for cleaning, shopping, lightings & decorations, meeting family & friends….above all tireless cooking. This diwali let us help you make Besan Ladoos, it’s amazingly delicious. This traditional sweet will literally melt in your mouth !!!!!

Besan Ladoo is also popular as Magaj Na Ladoo in Gujarati. However there is little difference in process as we use milk while preparing it.

Besan ladoos are delicious sweets which are generally prepared during occasions and festivals. I remember trying my hand on this delicacy a lot of times and every time it was a big blunder. And I actually had to keep the mixture in refrigerator to make it look like a dough. I knew the right amount of ghee and besan but had no idea that it has to be added gradually and not at one go. Again roasting it too little or too much also spoils the taste.

But I loved these besan ladoos so much that I had decided to learn the trick. After many trials and errors I got it perfect. A simple change in method and it completely changes the results. I would add lot of ghee initially and that would make roasting the flour difficult. So the trick to roast besan evenly is to roast it properly before adding much ghee.

I have seen many times people add sugar right after roasting besan. It is better to let besan cool down before we add sugar to it. This avoids melting of sugar due to heat.

We can also prepare Besan Ladoo in microwave. It hardly takes 5 minutes to roast besan in microwave. I will soon be posting the recipe of Besan Ladoo in Microwave oven.

Ingredients
  • 1 gram cup besan/chick pea flour
  • 3/4 cup sugar
  • 4-5 pieces green cardamoms/ elaichi
  • 4-5 tbsp ghee (if needed adjust ghee by adding 1 tbsp extra)
Instructions
  1. Powder the sugar with elaichi.
  2. Dry roast the besan flour in a pan or kadai on slow flame. Keep on stirring the besan flour continuously for approximately 10-12 minutes, so that it doesn't burns. Initially the mixture will look like crumbled flour as shown in the pic.
  3. Now add little ghee & roast. Keep on adding little ghee until the besan turns aromatic and dark golden in color. Once you feel the besan is roasted add half a teaspoon of ghee and keep stirring.
  4. Soon it will look like paste. Turn off the flame and let it cool completely. Add powdered sugar and Stir and check if the flour can bind well to roll to balls.
  5. When the flour looks greasy enough, do not add any more ghee. While making ladoos mixture will feel like shiny and greecy texture. This is because powdered suger melts in our hands. Soon it will become dry and easy to handle. Take small portions and roll into balls. Initally the ladoos will be soft so keep it aside and allow it to dry for sometime.
  6. Again roll the ladoos a bit and they are ready to serve.
Recipe Notes

Roasting the flour will leave a raw smell of flour to the ladoos, so roast until you begin to smell good and the color changes to golden. Do not use too much of ghee initially as this will make it difficult to roast the flour.

Do not add all the ghee at once, keep on adding little by little while roasting the besan.

You can add dry fruits like cashew, pistachio and raisins if you wish.
