Bhel Puri Recipe / How to make Bhel Puri

bhelBhel Puri is my favourite chaat to prepare when I am in no mood to cook. As you do not have to really cook it. I keep the chutneys prepared in lot in refrigerator and Roasted Masala Puffed rice is also generally stored at home. So in 10 minutes this bhel is ready. Just toss puffed rice with tomatoes, onions and potatoes along with chutneys and its ready.

Few things to remember while making Bhel puri.

Do not prepare in lot when you prepare it for guests or get together. As it turns soggy.

Use Roasted masala Puffed rice and not the normal raw puffed rice. As it gives the required crunch and taste to it.

Do not keep chutney consistency too runny. As it may make puffed rice soggy.

Chaat masala is the king of this recipe. If you do not have ready made chaat masala just grind jeera, black pepper, salt and black salt in equal proportion and a chatpata chaat masala is ready. This masala can also be used in buttermilk, limbu pani and other chaat items like sev puri, dahi puri and papdi chaat.

Bhel Puri is available all over India and is one of the most common chaat items. Its so easy even beginners can also prepare it. I have seen in Gujarat at some food joints they also mix khaman Dhokla while preparing bhel. This gives good binding to the mixture and it tastes little different.

Bhel Puri has no recipe as such as we are just tossing the ingredients. Feel free to adjust every thing according to your taste. You can make jain Bhel puri by skipping onions and boiled potatoes. Just add chopped cucumber along with some fried chivda and pomogranate.

Ingredients
  • 4 cups Puffed Rice kurmura (roasted masala)
  • 1/2 cup nylon sev
  • 1/2 cup Onions (finely chopped)
  • 1/2 cup Tomatoes (finely chopped)
  • 1/2 cup potatoes (boiled, peeled and chopped)
  • 4 tsp masala dal
  • 1 tbsp Raw Mango (finely chopped - optional)
  • 8-10 tbsp Meetha Chutney / tamarind date chutney
  • 3-4 tbsp Teekha Chutney / coriander chutney
  • 4 tsp Geela Garlic/lehsun Ka Chutney (optional)
  • 3/4 tsp chaat masala
For The Garnish
  • 1/2 cup nylon sev
  • 4 tsp masala dal
  • 4 tsp Coriander / dhania (chopped)
  • 1/2 cup Masala Peanuts
Instructions
  1. Prepare Roasted Masala puffed rice as mentioned here. Green coriander chutney as per this. Dates and Tamarind chutney as mentioned here.
  2. Add Onions, Tomatoes and Potatoes to Roasted masala puffed rice.
  3. Add the chutneys and chaat masala.
  4. Stir well and garnish with masala dal, masala peanuts and coriander. Serve immediately as it turns soggy if kept for long.
