Cashew Peanut Chikki Recipe/ Chikki Recipe
There are so many variations in chikki that can be prepared. This cashew peanut chikki recipe is a winning recipe in a food competition and has been prepared by my mom since many years. This is originally known as Sankrant Papdi.Dry fruits chikki, peanuts chikki, sesme Chikki and you can prepare chikki by mixing them all. You can use sugar or jaggery while preparing chikkis.
Sankrant means uttrayan as per Gujarati tradition people carry all the snacks and kites to the terrace and relish the delicacies with family while enjoying the kites. This festival is known for flying kites and chikkis.
I have never met a person yet who tasted this chikki and did not ask me its recipe!!! Yes its that tasty. Even kids would love it and its a good way to include cashews and peanuts in their diet.
Here I have used roasted unsalted peanuts in powder form. If you do not get roasted unsalted peanuts you can just microwave raw peanuts for 2-3 min and let it cool. Once it cools down you can easily remove its skin. So enough of theory now lets move to the recipe. The same process can be followed for cashews also. Some times cashews turn soft and soggy which makes it difficult to grind. If we try harder it starts releasing oil. So just microwave them as well for a minute and it will again be crispy.
I suggest not to change the proportion of sugar or any other ingredients over here. As it is a perfect measurement and it makes yummy and mouthwatering chikkis. You might feel that sugar syrup is not enough while adding cashew and peanut powder. But once you mix it is proper in quantity.
