Hariyali Vegetable or Hariyali handi is a punjabi dish with classic green colour gravy and vibrant flavours of spinach and mint. I had tasted this recipe at my neighbours place and right away I had decided to prepare it. I just loved this nutritious recipe as it had completely different taste and aroma. This is completely under rated recipe and once you prepare it you will know for your self.
Usually punjabi recipes are so lenghthy that we end up preparing them only on weekends or when we have guests.
This recipe is divided in 4 parts which are preparing mint onion paste, blanching spinach and grinding it to the paste, boiling peas and potatoes and assembling all the ingredients. Inspite of all these steps this sabzi is not so lenghthy. As blanching palak hardly takes any time. By the time peas and potatoes are cooked the paste would be ready. You can also add any other veggies of your choice like carrot, beans and capsicum. Make sure you either boil them or shallow fry so that they are cooked properly.
Assembling all the ingredients is also quick as they are already cooked.
Usually it is a big task to feed these greens to kids but this sabzi is so tasty and tastes similar to hotel food. So kids are definately going to love it. Here I have used paneer but if you do not wish to add it you can skip it. It adds protien to the veggie and also tastes good. If you wish you can add paneer cubes also. Here I have crumbled paneer. This veggie tastes best with paratha but you can also serve it along with chapati, fukas or rice.
