Instant Microwave Khandvi Recipe
Khandvi is a delicious side dish of Gujarati Cuisine. You might have tried it at Gujarati weddings or gatherings. It is readily available at market stores these days but you can make it at home also. This famous snack is one of the trickiest recipe and really need practice if made on gas stove. Right from proportion to consistency every thing needs to be perfect.
I remember my earlier attempts to learn this dish and how I would end up wasting all the ingredients. I would never attempt this dish whenever we had guests at home. Khandvi is prepared from besan and butter milk mixture along with ginger chilli paste. Once it is cooked it is spread on a flat surface. Once it cools down we roll and cut it followed by giving it a tadka. Microwave makes this recipe so simple and quick and it also reduces the chances of disaster. As you can always manage the temperature in microwave it becomes a cake walk to prepare it.
We need to keep two things in mind while preparing khandvi. First is proportion of besan and curd. If you are using curd the proportion should be 1:1. While if you are using besan and buttermilk you have to use 1:2.5. Second thing that you have to keep in his mind is to stir it frequently while cooking the mixture in microwave.
It hardly takes 10 minutes to prepare this lengthy dish. You can prepare this dish and give it tadka later while serving it.
