Jini Dosa is a popular street food of Mumbai and it is just beyond yummyness in taste. I wish I could make you taste this dosa right away as no words can describe how yummy it tastes!! I dont know why is it named Jini Dosa but the only thing that comes to my mind when I listen Ginnie is a Jin coming out of a magical lamp. And this might be the reason of naming it Jini dosa, as it is really magical in taste.
This street food is available in mumbai’s major khau galli’s. I wonder why Jini Dosa isn’t as famous as masala dosa or mysore dosa as I personally find it tastier than any of the dosa variety available in India.

The ingredients used over here like capsicum, onions, tomatoes, cabbage, cheese might remind you of Pizza. But it tastes far better than that. Trust me on that and if you dont just give it a try and you will know why am I telling this. Yes it has lot of cheese and calorie conscious people might think twice before having it. But its worth to spend half an hour more in Gym and relish this Dosa occasionally.
When I had tasted this Dosa for the first time I was determined to prepare it at home. It is such a wonderful combination of veggies, Dosa, cheese and potato sabzi that it can make any one drool over it. I have adapted this recipe from Tarla Dalals blog. I have not made any changes in it.

However when I read the recipe for the first time I was not sure if my thin dosa will be able to bear and cook the veggies.I thought it will tear apart on the tawa itself. But do not worry it does not happen. You have to be little cautious and in case if you do not feel confident enough to do that here is a trick.
Mix all the ingredients in a pan and let it cook on slow flame till tender. Directly apply it on dosa grate the cheese and its done. But make sure you let dosa cook well before spreading the mixture on it.

Ingredients
Tomato- Garlic Chutney
  • 2 Tomatoes (medium sized - roughly chopped)
  • 2 tbsp garlic/lehsun (roughly chopped)
  • 2 tbsp green chillies (roughly chopped)
  • Salt to taste
  • 1/4 cup Water (optional)
Aloo Sabzi
  • 1 1/4 cups potatoes (boiled and peeled potato cubes)
  • 1 tbsp oil
  • 1/2 tsp mustard seeds/rai / sarson
  • 1/2 tsp split urad dal/split black lentils
  • 1 tsp green chillies (finely chopped)
  • 1 cup Onions (finely sliced)
  • 1/4 tsp turmeric powder/haldi
  • 1 tsp lemon juice
  • Salt to taste
  • 1 tbsp coriander/dhania (Finely chopped)
For Stuffing Jini Dosa
  • Dosa batter
  • 1 cup Butter
  • 1 cup Onions (finely chopped)
  • 1 cup cabbage (chopped)
  • 1 cup capsicum (chopped)
  • 1 cup Tomatoes (finely chopped)
  • 2 tsp chilli powder
  • 4 Cheese Cubes
  • 1/4 cup Garam masala / Pav Bhaji masala (use any one - 1tsp for each jini dosa)
  • 4 tbsp tomato garlic chutney (recipe above)
  • Potato Sabzi (recipe above)
  • Salt to taste
  • Red coconut chutney

Instructions
Tomato- Garlic Chutney
  1. Grind chopped tomatoes, roughly chopped garlic & green chillies with salt. Pour it in a bowl and depending on the consistency add water if required.
Aloo Sabzi
  1. Heat the oil in a kadhai and add the mustard seeds, urad dal,hing and green chillies and sauté on a medium flame for 30 seconds. Add onions and cook till it is tender. Add the potatoes, salt, turmeric powder and lemon juice mix well and cook on a medium flame for 2 minutes, while stirring occasionally. Add the coriander, mix well and cook on a medium flame for 1 minute.
Jini Dosa
  1. Heat a tava /non-stick tava (griddle), sprinkle a little water on it (it should sizzle immediately) and wipe off using a piece of cloth. Pour a big spoon of the batter on the tava (griddle) and spread in a circular motion to make a thin dosa.
  2. Place 1 tbsp of butter in the centre, add handful mix of all the chopped veggies (onions, cabbage, capsicum and tomatoes), mix well and cover and cook on a medium flame for 2 minutes. Cover and cook for 2 minutes.
  3. Add 1 tbsp of tomato-garlic chutney, 1 tbsp of coconut chutney, 1tbsp aloo masala sabzi, 1 tsp of garam masala or pav bhaji masala, ½ tsp of chilli powder, salt and mix well.
  4. Spread this mixture evenly on the dosa. Grate 1 cheese cube and let it cook till cheese melts.
  5. Roll the dosa and cut in 3-4 pieces and serve with red coconut chutney.
