non-fried-dahi-vadaDahi Bhalle or Dahi vada is one of the most soothing street food on India. As the name suggests Bhallas or vadas are served with cold yogurt along with chutneys and masala. We can prepare Dahi Vada from Urad dal or Moong dal. Traditional way of preparing dahi vadas is soaking urad dal over night, deep frying vadas and soaking again to make it moist and spongy.

This soothing chaat is so heavenly tasty that while eating you wont realise if you gulp few extra deep fried vadas. But next day calorie conscious people will have to jog few rounds extra to burn those extra calories. So as we know  prevention is better than cure. How about having same delicious taste of Dahi Vadas excluding those calories. Yes this is Non Fried Dahi Vada. And believe me no body would be able to judge if you have deep fried vadas or not until and unless you tell them.

For Non Fried Dahi Vada we have used appe pan which is widely available in market now a days. It will need just a drop of oil on both the sides and vadas will be ready. As appe pan has non stick coating vadas do not stick to it. We need to soak it a little longer than the fried Vadas. But this does not change the taste.

To make vadas soft and spongy without using soda or eno fruit salt make sure you soak urad dal atleast for 8-10 hours. After grinding dal in mixer grinder we again beat it manually or with the help of hand mixy. The reason behind beating the batter again is to let air enter making batter fluffy. As we are not frying vadas here we will be soaking it a little longer than fried vadas.

Ingredients
Non Fried Dahi Vada
  • 1 cup urad dal
  • 2 tbsp Moong dal
  • 2 green chillies
  • 1/4 inch ginger
  • 2-3 cups curd/dahi
  • 1 tbsp oil
  • Salt to taste
  • 2-3 tbsp sugar
Dahi Vada Masala
  • 2 tsp cumin seeds powder/jeera
  • 2 tsp Whole Coriander seeds
  • 8-10 Red chilli
Assembling Dahi Vadas
  • 1 tbsp chopped coriander/dhania (optional)
  • 2 tbsp Tamarind and Date chutney
  • 2 tbsp coriander chutney
Instructions
Dahi Vada Masala / Chutney
  1. Take half a teaspoon oil and add coriander seeds, cumin seeds and whole red chillies. Roast it on slow flame till it becomes fragrant. Take it off the flame and let it cool completely. Grind it using mixer grinder.
Non Fried Dahi Vada
  1. Clean, wash and soak the Urad dal for 8 to 10 hours. Drain and keep aside. Add the green chillies, ginger,salt and blend in a mixer with very little water.
  2. Take it in a container and beat well using hand beater or hand blender. This will make vadas fluffy.
  3. Heat a non-stick appe pan and spread the mixture. Add few drops of oil if you wish. flip them and cook on both the sides till golden brown.
  4. Alternatively if you wish to fry the vadas you can deep fry them in oil.
  5. Remove the vadas and soak them in water or thin buttermilk for an hour.
  6. Thereafter, squeeze out the water and arrange the vadas on a plate. Whisk the curds with the salt and sugar. Spread the seasoned curds over the vadas. Drizzle tamarind chutney and coriander chutney followed by Dahi vada masala / chutney
  7. Delicious Dahi vadas is ready to be served.
Recipe Notes

-If you do not fry vadas it is recommended to soak vadas for longer period. If you want to serve it for dinner, make sure you prepare vadas by evening and soak them in buttermilk few hours before serving.
