Quick Sevai Recipe/Vermicelli Kheer Recipe/Kheer
Since my childhood I have been relishing this quick sevai which my mom used to prepare on Sundays. In Gujarat we would call it Sevai but in Mumbai when I asked a local shopkeeper to give me sevai he handed me salty sev. It was then that I came to know that this simple sevai has many names and nick names.
Sevai has various local names like seviyan or sevaiyan in Hindi, Maharashtrians call it valavat/ shevaya, Bengalis call it shemai, We Gujaratis call it sev or meethi sevai , Kannada people call it shavige, sevalu or semiya in Telugu, and semiya in Tamil and Malayalam. It looks like spagatthi or thin strans.
Types of Sevai
It comes in three forms in local market. Non roasted, semi roasted and roasted. If you are buying a non roasted ones which can be identified easily through its color, you need to roast it well before adding milk or water. It is prepared from wheat but still the color is similar to Rava or Sooji. Semi roasted and roasted are darker in color and are quicker to prepare since they are already roasted. Here I have taken roasted wheat sevai.
This quick sevai is instant as the name suggests. Traditionally sevai which is prepared on Eid is different. This is a cheat recipe and hence it is quick sevai.
