Eggless Rava Tutti Frutti Cake/ Rava Cake Recipe


Who says healthy cant be yummy. This healthy rava cake tastes yum and is soft moist and everything you want a cake to be.
Its simple to make and does not need condensed milk or any other ingredient that is not available in your kitchen.
My kid does not like rawa at all. But he happily relishes this Rava Tutti Frutti Cake/ Eggless Semolina Cake Recipe.

Rava or selomina also known as sooji is considered to be one of the healthiest food in indian cuisine. It is widely used in preparing breakfast items like rawa upma, dosa, rava uttapam and idlis. But when it comes to preparing cakes we stick to basic flour like maida or whole wheat flours. So this time I thought to try mawa cake or rava cake.
Here I have used fine rawa and whole wheat flour. I had tried this cake with maida and whole wheat flour both. Whole wheat flour gives this cake a bit crumbled texture and maida gives it a good binding. But still I prefer whole wheat flour over maida. As it makes the cake healthier.

I have tried lot of variations of cake with maida and whole wheat flour. But I wanted to try something that includes rava. So I came up with this innovative recipe which I call it as “Rava Tutti Frutti Cake Recipe” that include selomina in my kids diet. And was really happy with the final result of this light and spongy rava cake.

Here I have used tutti frutti which would give my kid a reason to try it. As kids these days are very picky, so we have to make sure that any food served should be presented in such a way which is tempting for their eyes. You can also add raisins to it.
Make sure you do not over bake this cake as it will make it dry.

Ingredients
  • 1 Cup Fine Rava
  • 1/2 Cup Maida/Whole Wheat Flour Plz see notes I have used Whole Wheat Flour
  • 1 Cup powdered Sugar
  • 1/2 Cup Butter I have used home made butter
  • 1/2 Cup Fresh Curd
  • 1 Cup Milk
  • 1/2 Cup Tutti Frutti
  • 1 tspn baking powder
  • 1 tspn baking soda
  • 1 tspn Vanilla Essence
Instructions
  1. Pre heat oven for 10 minutes on 180 degrees. Take a mould and grease it well and put a parchment paper.
  2. Soak rava in milk and keep it aside for 10-15 minutes.
  3. Take butter and sugar and beat them till it becomes smooth and fluffy.
  4. Add curd to it and mix well.
  5. Now add soaked rava, maida/whole wheat flour, baking powder, baking soda, vanilla essence and mix gently. Add Tutti Frutti and mix gently.
  6. Now add the cake batter to greased pan. Sprinkle some tutti frutti on top of the batter.
  7. Bake it in a pre heated oven for 35-40 minutes at 180 degrees. after 35-40 minutes cover it with aluminium foil and bake it for another 10 minutes at 160 degrees. Check if it is done by inserting a tooth pic if it comes out clean its done.
  8. Take out the cake and put it on a wire rack and let it cool down completely. Do not demould it before cooling completely.
  9. Once it is cool demould it and remove the parchment paper. Rava tutti frutti cake is ready to be served.
