  • 250gms Roasted Peanuts
  • 250gms Jaggery(I have taken organic Jaggery)
  • 2tbsp Dessicated Coconut(Not the fresh coconut)
  • ghee
  • 1/4cup Water
  1. Grate jaggery or just chop it roughly with the help of sharp knife and keep it aside.
  2. If you do not have roasted peanuts just dry roast them on medium flame for a while. You can also microwave it on high for 2-3 minutes depending upon your oven. Let it cool for a while and then remove its skin.
  3. Take peanuts and chop it in vegetable chopper and keep it aside. Do not try this in mixer grinder as it does not give desired result. It turns peanuts into powder. If you do not have a chopper you can simple crush it using kitchen towel and a heavy object.
  4. Take a heavy bottomed pan and add jaggery along with water. Stir continuously on medium flame. Soon Jaggery will start melting. It will keep on changing colour and consistency as shown in the pic. We need to stir it till it turns all frothy. It will take around 4-5 minutes to reach this stage.
  5. Now take a bowl and drop some jaggery syrup in it. if it turns solid and you are able to break it jaggery syrup is ready. If not then keep stirring it for another minute.
  6. Once jaggery syrup is ready add peanuts to it and stir. Lastly add dry desiccated coconut to it and mix well.
  7. Transfer the mixture to a greased plastic sheet and cover it with another greased plastic sheet. It is easier to roll on plastic sheet compared to greased plate or any flat surface.Place the mixture in the middle so that we can spread it evenly on all the sides. Roll it as thin as possible.
  8. Remove the sheet and before it cools down cut it into squares or diamonds.
  9. Once it cools down store it in an air tight container, Crispy brittle and crunchy thin peanuts chikki is ready to be relished.
