Rice Khichu Recipe/How to make Khichu
Rice Khichu is a traditional and popular street food of Gujarat. It is also widely made in most of the Gujarati homes. It is an instant dish and can be made quickly within minutes. This dish tastes delicious and needs no previous preparation. It is traditionally served with groundnut oil and red chilli powder along with buttermilk.
This quick snack is also prepared from wheat flour, bajra flour and jower flour. But Rice Khichu is more popular in Gujarat. I prepare it when I feel too lazy to cook something for dinner.If I do not have any ingredients to make a full fledged meal I can go cook this quick and filling meal.
Rice Khichu is quick to cook compared to khichu prepared from wheat, jower or bajri.
Tips For Making Rice Khichu
Always follow the proportion of water as it will give perfect softness and texture to the dish.
Be Careful while adding papad khaar or baking soda as we are also adding salt to it. And we do not want it to become salty.
Mix Khichu well while adding rice flour to avoid lumps formation. Keep stirring when you add the flour. sprinkle flour evenly and make sure you do not add too much of it.
Khichu is such an easy recipe that even beginners can prepare it easily. While steaming khichu you might feel that it is still soft. And it needs further steaming. But it gets firm once it cools down.
Traditionally it is served with oil and red chilli powder. But these days even ready made masalas are available in market. You can serve it along with it also. You can serve it with butter milk or dahi also.
