Sev Tomato is a dish which does not need even chapattis. It is such a quick recipe that start to finish it will just take 10 Minutes. It is one of the best option when you are running late, do not have any veggies at home, tired or too bored to cook. Hardly takes any time or ingredients and tasty delicious sabzi will be ready.
Sev Tomato sabzi is prepared differently everywhere. Even I used to prepare this sabzi differently till I came across this recipe. But once I learnt making it this way I never went back to my previous way of preparing this sabzi. Usually we are used to with the taste we have been having since years. And even if we get some better way of cooking it we take time to adjust with that changed taste. But this time taste was so yummy that my family instantly got fond of it.
You can follow same process to prepare Gathiya tomato sabzi. Here I have added medium sev. Do not use thin or nylon sev for this sabzi.
This sabzi tastes good with rice. This is a Rajhasthani version of sev tomato sabzi. In Gujarati version you just skip cumin seeds/jeera and onions. Rest of the ingredients remain the same.
I have seen at some places people adding jaggary or sugar to this sabzi. But personally I do not like sweet taste and it also does not go well with garlic. So I prefer to skip it. You can also try adding garlic sev instead of plain sev to this sabzi. It also gives a different taste.
