Stuffed Tomato sabzi is really a saviour recipe when you have any unexpected guests and have no special ingredients to make an appealing meal. This sabzi looks so good tastes so good and is so easy to prepare. What else can we ask for. This dish does not ask for any special ingredients that we do not have in our kitchen.
I love tomatoes and I end up adding tomatoes to the every other sabzi that I prepare. But I never thought this can serve as a main ingredient also. Tomatoes give a tangy taste to any dish and if you love that flavor you will surely love this sabzi. It is a welcome change from our routine sabzis and easy too.
when you are expecting guests you can just prepare the stuffing and keep it aside. While serving it becomes really quicker to just cook the tomates and it will be ready in no time. Lot of people add panner or cheese to make this sabzi even richer. But you can skip it if you do not have it. It does not make it any less tastier. Here I have cooked the tomatoes in a pan but if you wish you can also bake it. Baking makes it quicker also. Simple grease the baking tray and apply little oil on stuffed tomatoes. Place them in a tray and microwave it on high. make sure you check the tomatoes after one minute. Every microwave has different capacity and takes more or less time to cook as per its temperature.
