Tikha Gathiya Recipe/How to make Tikha Gathiya
Tikha Gathiya is a popular Crispy and crunchy Gujarati snack which is easy to make and very tasty. This is similar to normal sev with little difference. Sev is plain without much spices like red chilly powder and ajwain but gathiya is spicy and is little thicker in size. It takes little longer to cook and get crispy compared to sev. Gathya is an excellent tea time snack and snacks for kids.
During Diwali we prepare these besan gathiya and relish it for many days. Its stays fresh in an air tight container for many days. You can also carry them while travelling.
Trick to make crispy gathiya lies in preparing the dough. I have seen many people making smooth paste like dough and then preparing Gathia. But here I have prepared tight dough first and then made it soft by adding little water gradually while kneading it till it becomes soft. By doing so the dough will absorb air and while making Gathiya it will not get lot of pores in it. if kneaded well it also does not break in between. Here I have not added ajwain as we have been preparing it this way and it tastes really good. If you wish you can add it to the dough.
There are lot of variations of this snack like papdi, fafda, bhavnagri etc. It tastes best with tea or and as snacks for kids. They are quite filling and tasty.
Few things that you need to remember while making Gathiya. Do not over crowd Gathiyas in oil.
Do not flip them soon after adding it into the oil. Let it rise on the surface and then flip.
Let them cool completely before storing as they turn crispier once cooled down.
